Gurr, or jaggery, is more than just molten-gold, organically prepared sugary balls that your good old sugarcane farmer produces and your family nutritionist would recommend any day in lieu of the refined and artificial sweeteners. It’s about a centuries old tradition — from the way it’s prepared (by “evaporating water from cold-pressed sugarcane juice and cooling the thickened liquid in moulds”) to how it is consumed as a sweet delight that won’t give your blood glucose levels an abrupt (read unwanted) spike.
