INGREDIENTS
Cooking oil 4 tbs
Tomatoes (sliced) 3 medium
Paprika powder 1 tsp
Stock cube 1
Garlic (chopped) 1 tbs
Onion (chopped) 1 medium
Beef mince (hand chopped) 300g
Paprika powder 1 tsp
Himalayan pink salt ½ tsp or to taste
Black pepper (crushed) 1 tsp
Dried Italian herbs 2 tsp
Water 1 cup or as required
Tomato paste 2 tbs
Fresh basil leaves (chopped) handful
Elbow pasta 250g boiled with salt
Mozzarella cheese (grated) 100g
Cheddar cheese (grated) 50g
DIRECTIONS
* In a saucepan, add cooking oil, garlic and mix well.
* Add tomatoes, pink salt, dried Italian herb, paprika powder, black pepper crushed, mix well and cook on medium flame for 1-2 minutes, cover and cook on low flame for 4-5 minutes.
* Add water, stock cube and mix well.
* Turn off the flame, blend well and set aside.
* In a wok, add cooking oil, garlic, onion and sauté until translucent.
* Add beef mince and mix well until it changes colour.
* Add paprika powder, pink salt, black pepper crushed, dried Italian herbs, mix well and cook on medium flame for 1-2 minutes.
* Add water and mix well, cover and cook for 8-10 minutes.
* Add tomato paste and mix well.
* Add fresh basil leaves and mix well.
* Add boiled pasta, prepared tomato sauce, mozzarella cheese, cheddar cheese and mix well.
* Add mozzarella cheese and fresh basil leaves, cover and steam cook on low flame until cheese melts (4-5 minutes) and serve.

Penne macaroni 70g
Fusilli macaroni 70g
Shell macaroni 70g
Water as required
Cold water as required
Pickled cucumber ½ cup
Pickle juice 1 tbs
Garlic clove 2
Olive oil 5 tbs or as required
Salt 1½ tbs or to taste
Red chilli (crushed) ½ tsp
Red bell pepper (diced) ½ cup
Cucumber (deseeded and diced) ½ cup
Black olives ½ cup
Green olives ½ cup
Cherry tomatoes ½ cup
Capsicum (diced) ½ cup
Beef pepperoni (small) ½ cup
Onion (diced) ½ cup
Cottage cheese cubes 200g
Fresh parsley ½ cup
Black pepper (crushed) as required
DIRECTIONS
* In a pot, add water, salt, mix well and bring it to boil.
* Add penne macaroni, fusilli macaroni, shell macaroni, mix well and boil for 5-7 minutes then strain and rinse with tap water and set aside.
* In a blender, add pickled cucumber, pickled juice, garlic, olive oil, salt, red chilli crushed, black pepper crushed, blend well and set aside.
* In a bowl, add boiled pasta macaroni, prepared salad dressing and mix well.
* Add red bell pepper, cucumber, black olives, green olives, cherry tomatoes, capsicum, beef pepperoni, onion, cottage cheese, fresh parsley and toss well.
* Sprinkle black pepper crushed garnish with cherry tomato and serve!
