Potatoes 800g
Himalayan pink salt to taste
Spring onion 1 stem
Thai red chillies 2
Green chilli 1
Fresh coriander handful
Garlic 2-3 cloves
Red chilli (crushed) 1 tsp
Black pepper (crushed) ½ tsp
Soy sauce 1 tsp
Lemon juice 1 tsp
Cooking oil as required
* Peel potatoes and cut in wedges, sprinkle pink salt and mix well.
* In a wok, heat cooking oil, fry potatoes until golden and set aside.
* Chop spring onion, Thai red chillies, green chilli, fresh coriander and garlic.
* In a bowl, add all chopped vegetables, pink salt, crushed red chilli, crushed black pepper, soy sauce, lemon juice and mix well.
* In a small frying pan, add cooking oil and heat it.
* Add hot cooking oil in the bowl and mix well.
* In a bowl, add fried potatoes and coat well.
* Serve with sauce or dip!
