Butter 100g
Icing sugar 80g
Egg 1
Vanilla essence ½ tsp
All-purpose flour (sifted) 1 ½ Cup
Milk powder 2 tbs
Himalayan pink salt ¼ tsp
Dates (soft) 100g
Butter (soft) 2 tbs
Almonds (chopped) 50g
Egg yolk 1
Milk 1 tbs
Sesame seeds as required
* In a bowl, add butter and beat well.
* Add icing sugar, mix then beat well until creamy.
* Add egg, vanilla essence and beat well.
* Add all-purpose flour, milk powder, pink salt, mix well and beat until well combined.
* Wrap dough tightly in cling film and refrigerate for 30 minutes.
* In a chopper, add deseeded dates, butter and chop well.
* Add almonds and chop well.
* Take a small quantity of mixture,make a ball then roll out with the help of hands and set aside.
* Take out the dough from refrigerator, remove cling film, sprinkle dry flour and roll out with rolling pin.
* Place rolled date filling on the dough,roll the dough slightly and seal the edges then cut the dough into 3” finger cookie.
* Place date cookies on a baking tray lined with butter paper and refrigerate for 10 minutes before baking.
* In a bowl, add egg yolk, milk and whisk well.
* Apply egg wash on cookies and sprinkle sesame seeds.
* Bake in preheated oven at 170C for 15-20 minutes (makes 16-18).
