Butter (soft) 80g
Black pepper (crushed) ¼ tsp or to taste
Garlic powder ¼ tsp
Salt 1 pinch or to taste
Buns 4
Cooking oil 3 tbs
Onion (thick slices) 1 large
Capsicum (julienne) 1 medium
Salt to taste
Beef steak (tenderloin/undercut/rib eye steak) 300g
Black pepper (crushed) ¼ tsp
Worcestershire sauce 1 tbs
Mozzarella cheese 50g or as required
Cheddar cheese slices as required
* In a bowl, add butter, black pepper crushed, garlic powder, salt and mix well.
* Cut rolls/ buns from the centre and apply garlic butter.
* Heat cast iron pan, toast rolls/buns and set aside.
* In a cast iron pan, add cooking oil, onion and sauté until translucent.
* Add capsicum, black pepper crushed, salt, mix well and stir fry for a minute and set aside.
* Cut thin slices of beef steak.
* In the same cast iron pan, add cooking oil, beef slices and mix well.
* Add black pepper crushed, salt, and mix well and cook on medium flame until tender (6-8 minutes) then cook on high flame until it dries up.
* Add stir fried vegetables, Worcestershire sauce and mix well.
* Add mozzarella cheese and mix well.
* Cut cheddar cheese slice into triangles and set aside.
* On toasted rolls/buns, add prepared cheesesteak filling, cheddar cheese slices and cover with top bun to make a sandwich and serve (makes 4).

Chicken wings (with skin) 750g
Black pepper powder ½ tsp
Himalayan pink salt ½ tsp or to taste
Baking soda ½ tsp
Garlic paste 1 ½ tsp
Cornflour ¾ cup
All-purpose flour ½ cup
Chicken powder ½ tbs
Paprika powder ½ tsp
Mustard powder (optional) ½ tsp
White pepper powder ¼ tsp
Water ¾ cup
Cooking oil as required
Butter (optional) ½ tbs
Garlic (chopped) ½ tbs
Onion (sliced) 1 medium
Green chilli 2
Red chilli 2
Black pepper (crushed) to taste
* In a bowl, add chicken wings, black pepper powder, pink salt, baking soda, garlic paste and mix well, cover and marinate for 2-4 hours or overnight in refrigerator.
* In a bowl, add cornflour, all-purpose flour, black pepper powder, chicken powder, pink salt, paprika powder, mustard powder, white pepper powder and mix well.
* Add water and mix well.
* Dip and coat marinated wings.
* In a wok, heat cooking oil (140-150C) and fry chicken wings on medium flame for 4-5 minutes, take out and let it rest for 4-5 minutes then fry again on high flame until golden brown and crispy (3-4 minutes).
* In a wok, add cooking oil, butter and let it melt.
* Add garlic, onion, green chilli, red chilli and mix well.
* Now add fried wings and sauté for a minute.
* Add black pepper crushed, mix well and serve!
