Instant coffee 3 tbs
Sugar 1/3 cup
Water 3 tbs
Whipping cream ½ cup
Condensed milk 4-5 tbs or to taste
Instant coffee for garnish

* In a bowl, add instant coffee, sugar, water and mix well then beat the mixture until it changes colour and becomes frothy (2-3 minutes) and set aside.
* In a bowl, add whipping cream, condensed milk and beat until stiff peaks form.
* Now add coffee mixture, mix until well combined and transfer to a piping bag.
* In serving cups, add pipe out prepared coffee and cream mixture.
* Sprinkle instant coffee, garnish with coffee beans, mint leaves and serve chilled (makes 10-12 cups).

Cream ½ cup
Lemon juice 5 tbs
Mayonnaise ½ cup
Paprika powder 2 ½ tsp
Himalayan pink salt 2 tsp or to taste
Sesame seeds (roasted) 1 ½ tbs

Fresh parsley (chopped) 1 tsp
Garlic 3 cloves
Onion 1 medium

Yoghurt ½ cup
Tomato paste 1 tbs
Cooking oil 4-6 tbs
Cinnamon powder ¼ tsp
Onion powder 1 tsp
Cumin powder ½ tsp
Black pepper (crushed) ½ tsp
Turmeric powder ¼ tsp
Coriander powder ½ tsp
Red chilli powder ½ tsp or to taste
Garlic powder 1 tsp
Chicken fillets ½ kg
Hummus
Iceberg lettuce (shredded)
Salad
Potato fries
Feta cheese (cubes)
Lemon juice
Sumac powder
Fresh parsley (chopped)
Pita bread (grilled)
* In blender jug, add cream, lemon juice, mayonnaise, paprika powder, pink salt, sesame seeds, sugar, fresh parsley, garlic and blend well. White sauce is ready!
* In blender jug, add onion, garlic, dried red chillies, vinegar, yogurt, tomato paste, cooking oil, pink salt and blend well. Red sauce is ready!
* In frying pan, add yogurt, paprika powder, cinnamon powder, onion powder, cumin powder, black pepper crushed, turmeric powder, coriander powder, red chilli powder, garlic powder, pink salt, lemon juice, cooking oil and mix well.
* Add chicken and mix well, cover and marinate for 15 minutes.
* Turn on the flame and cook on medium flame from both sides until done (8-10 minutes) and fire roast on direct flame until its charred from all sides.
* Stack up chicken pieces, insert fork and cut it with the help of knife.
* On serving plate, add hummus, iceberg lettuce, salad, potato fries, shawarma chicken slices, feta cheese, white sauce, red sauce, lemon juice, sumac powder, fresh parsley, pita bread and serve!
