Turkish Kebab

INGREDIENTS

Garlic 5 cloves

Red bell pepper 1 (medium)

Fresh parsley 2 tbs

Mince (with 20 per cent fat) ½ kg

Breadcrumbs ¼ cup

Red chilli (crushed) 1 tsp

Cumin powder ½ tsp

Paprika powder 1 tsp

Salt 1 tsp or to taste

Green chillies (large)

Tomatoes

Cooking oil

Naan

Fresh coriander (chopped)

DIRECTIONS

* In a chopper, add garlic, red bell pepper, and fresh parsley and chop well.

* Add beef mince, breadcrumbs, red chilli (crushed), cumin powder, paprika powder, salt and chop well. Cover and refrigerate for 15 minutes.

* Wet hand with water, take a mixture (175g) and skew on metal skewers (makes 4).

* On another metal skewer, skew large green chillies and tomatoes.

* On a griddle, place skewers, apply cooking oil and fry from all sides until done.

* On a naan, place kebabs, sprinkle fresh coriander and serve!

Chocolate Cake

INGREDIENTS

Cocoa powder 3 cups

Caster sugar 1 cup

Cream (room temperature) ¾ cup

Dark chocolate (chopped) 150g

Hot water ½ cup

Butter (unsalted) 250g

Icing sugar 2 cups

Vanilla essence 4 ½ tsp

Milk 1 tbs

All-purpose flour 2 ½ cups

Baking powder 2 tsp

Instant coffee 1 tbs

Baking soda 1 tsp

Salt 1 tsp

Cooking oil ¾ cup

Yogurt ¾ cup

Eggs 2

Warm water 1 ½ cup

Chocolate chips ¼ cup

Mini chocolate chips

Cherries

DIRECTIONS

* In a saucepan, add butter and let it melt.

* Add cocoa powder and mix well.

* Add caster sugar, salt, vanilla essence, cream and mix well.

* Add dark chocolate, hot water, whisk well and cook on low flame until it thickens (4-5 minutes).

*  Let it cool, reserve 4 tbs for frosting, transfer remaining sauce to a piping bag and set aside.

* In a bowl, add butter and let it rest at room temperature until soft then beat well until it changes color.

* Gradually add icing sugar, add cocoa powder and beat well.

* Add remaining icing sugar, vanilla essence, and 4 tbs of reserved hot fudge sauce and beat until well combined.

* Add remaining icing sugar and beat well.

* Add milk and beat well, transfer to a piping bag and set aside.

* Grease 8-inch round baking pan with butter, line with butter paper and set aside.

* In a bowl, place sifter, add all-purpose flour, cocoa powder, baking powder, instant coffee, and baking soda, salt, sift together and mix well.

* Add caster sugar and mix well. Homemade cake mix ready!

* In a bowl, add cooking oil, yogurt, eggs, and vanilla essence and beat well.

* Add prepared homemade cake mix and fold with the help of spatula.

* Add warm water and beat well.

* Add chocolate chips and fold with the help of spatula.

* Pour the batter on greased baking pan and tap few times.

* Bake in preheated oven at 180C for 40-45 minutes.

* Take out from oven and let it cool at room temperature.

* In a small cup, add caster sugar, warm water, and vanilla essence and mix well until sugar is dissolved and set aside.

* Remove cake from baking pan and with the help of the cake knife, horizontally cut layers of cake.

* Place first layer of cake on cake strand, apply prepared sugar syrup with the help of brush, add and spread prepared hot fudge sauce.

* Add and spread prepared chocolate buttercream frosting.

* Place another layer of cake and apply prepared sugar syrup with the help of brush and repeat the same process.

* Now spread prepared chocolate buttercream frosting and cover the sides of the cake with frosting.

* Garnish with hot fudge sauce, mini chocolate chips, and cherry and serve chilled!
