Cajun prawns

Ingredients

Prawns          5 -6

Lemon juice    3 tbsps

Olive oil         1 tbsp

Potatoes (boiled & mashed)  2

Butter 1tbsp

Salt    as required

Pepper as required

For Cajun spice mix:

Onion powder 1 tsp

Garlic powder 2 tsps

Ground black pepper  1 tsp

Paprika          2 1/2 tsps

Dried thyme   1 1/4 tsps

Dried oregano 1 1/4 tsps

Red chilli flakes         1/2 tsp

Salt    as required

Put all the ingredients together and grind well. Store in an airtight container.

Method

  • Marinate the prawns with Cajun spice mix and leave it for 30 minutes.
  • Then drizzle the lemon juice over the prawns.
  • Heat oil and grill the prawns for 5 to 7 minutes over medium heat.
  • In a bowl take the boiled, mashed potatoes, add butter, salt and pepper. Mix well.
  • Serve the grilled Cajun prawns with mashed potatoes. Enjoy!
