Mango slushy

RECIPES

Ingredients:

  • 2 large mangoes, peeled, cut into 1 inch pieces, frozen (about 4 cups)
  • 2½ cups coconut water
  • cup fresh lime juice (from about 4½ limes)
  • ¾ tsp salt
  • 2 cups crushed ice
  • 1 tsp pepper, plus more for serving

Preparation:

  • Blend mango, coconut water, lime juice, salt, 1 tsp pepper, and 2 cups ice in a blender until smooth. Divide among glasses, then sprinkle with more pepper.

Mango and cucumber salad

Ingredients:

  • 1 large shallot, thinly sliced into rings
  • 3 garlic cloves, finely grated
  • 1 green chilli, thinly sliced crosswise, seeds removed
  • ¼ cup fresh lime juice
  • 1 tsp salt
  • 2 ripe but firm mangoes, peeled, cut into ½-inch-thick spears
  • 1 cucumber, halved lengthwise, seeds removed, thinly sliced crosswise
  • ½ cup chopped corriander
  • Freshly ground black pepper

Preparation:

  • Toss shallot, garlic, chilli, lime juice, and salt in a medium bowl. Add mangoes and cucumber and toss again. Cover; let it sit at room temperature until shallot and cucumber are softened and juicy and flavours come together. It will take about 45–60 minutes.
  • To serve, add coriander to the salad and toss well; season generously with pepper.

Note: This can be made 3 hours ahead, but coriander should be added before serving. Cover and chill.

Frozen mango lassi

Ingredients:

  • 1¼ cups peeled fresh (or frozen, thawed) mango pieces
  • ¼ cup fresh lemon juice
  • ¼ cup honey
  • 2 tbsp plain yogurt
  • Pinch of salt
  • ½ tsp chilli powder, plus more for serving
  • Mint sprigs (for serving)
  • 4 cups of crushed ice

Preparation:

  • Purée mango, lemon juice, yogurt, salt, and ½ tsp chilli powder and honey in a blender until well blended. Add 4 cups of ice and purée until mixture is smooth.
  • Divide lassi among glasses. Garnish each with a mint sprig and lightly sprinkle with more chilli powder.

Mango salsa

Ingredients:

  • 2 ripe mangoes
  • ½ small onion
  • 2 tbsp chopped coriander
  • 1/2 green chilli pepper
  • 1 lime
  • Salt

Preparation:

  • Chop the mangoes into small cubes. Finely mince the onion. Chop the coriander . Remove the seeds from the green chilli pepper, taking care to properly shield your hands and eyes from the juice, then finely dice the pepper. Juice the lime and serve with chips.
