Cheese sticks

Ingredients

• 1/2 cup plain flour

• 2 eggs, lightly whisked

• 2 1/2 cups breadcrumbs

• 450g block mozzarella

• Vegetable oil, to shallow-fry

• Chili garlic sauce

Directions

• Place the flour, egg and breadcrumbs in separate shallow bowls. Line a baking tray with baking paper. Cut the mozzarella into 1.5 cm-thick slices, then into sticks.

• Toss the sticks in flour, shaking off excess. Dip in egg, then roll in breadcrumbs, pressing firmly to coat. Transfer to the prepared tray. Place in the fridge for 20 minutes to chill.

• Pour enough oil into a frying pan to fry. Heat over medium-high heat. Line a baking tray with paper towel. Working in batches, shallow-fry the sticks, turning, for one minute or until golden. Use a slotted spoon to transfer to the prepared tray. Season with salt and serve warm, with chili garlic sauce.

Cheesy chicken sticks

Ingredients

• 1 1/2 cups cream cheese, at room temperature

• 1 1/2 cups finely chopped cooked chicken

• 2 cups cheddar cheese (shredded)

• 2 eggs

• 1/3 cup plain flour

• 1 1/2 cups breadcrumbs

• Tomato salsa

Directions

• Line a 20cm square pan with baking paper allowing the paper to overhang two sides.

• Place the cream cheese, chicken and cheddar cheese in a bowl. Beat with a wooden spoon until smooth. Transfer to the prepared pan, smoothing the surface. Place in the fridge for one hour or until firm.

• Turn the cheese mixture out onto a chopping board. Use a long sharp knife to cut into 2cm x 10cm pieces. Place in the freezer for an hour.

• Lightly whisk the eggs in a bowl. Place the flour on a plate and the breadcrumbs on a separate plate. Working in batches, toss the cheese pieces in the flour, then in the eggs and then in breadcrumbs, pressing to coat. Place in the freezer for one hour.

• Spray the air fryer basket with oil. Place one-third of the sticks in the basket leaving space for the air to circulate. Spray with oil. Cook at 200C, turning and re-spraying with oil, for four minutes or until crisp. Repeat with remaining cheese sticks. You can also fry the sticks if you don’t have an air fryer.

• Serve the cheesy sticks with tomato salsa.
