Aam se kuch khaas

RECIPES

Mango pancakes

Ingredients

  • 1 cup all-purpose flour
  • 1 to 2 ripe mangoes, mashed or pureed
  • 1 teaspoon baking powder
  • 3/4 to 1 cup milk
  • 1 egg
  • 1 tablespoon butter
  • Sugar (to taste)
  • A pinch of ground cardamom (optional)

Directions

  • Mix the dry ingredients – flour, baking powder, sugar, and cardamom – in a bowl.
  • Mix the wet ingredients – mango puree, milk, eggs, and butter – in another bowl.
  • Combine the dry and wet ingredients.
  • Heat a lightly oiled pan.
  • Pour a scoop of the mixture into the pan and cook for about 2 to 3 minutes until the bottom side is golden brown.
  • Flip the pancake and cook the other side until golden brown.
  • Serve with mango pieces/cubes, a dollop of cream, and/or your favourite syrup.

Mango chickpea salad

Ingredients

Aam se kuch khaas

* 1 cup boiled, drained chickpeas

* 1/2 to 1 ripe mango, diced

* 1/2 red bell pepper, diced

* 1/4 onion, diced

* 1/4 to 1/2 cucumber, diced

* 1 tomato, diced

* A few sprigs of coriander, chopped

* 1/8 cup oil

* 1 teaspoon lemon juice

* A pinch of salt

Directions

* In a large bowl, combine the boiled chickpeas and the diced mango, bell pepper, onion, cucumber, and tomato. You can also add diced papaya and chopped or shaved carrots to the salad if you like. (And you can, of course, adjust the quantities of the vegetables according to your preference.)

* Drizzle the oil and lemon juice, and a dash of vinegar if you prefer, and add a pinch of salt.

* Toss to combine.

* Garnish with chopped coriander.

* Serve fresh.
