Beat butter, garlic, herbs, seasoning and spring onion together....

Cheese toast

Ingredients

* 1 crusty French bread

* 100 gm butter

* 1 tsp chopped garlic

* 1 tbsp chopped garden herbs

* Salt to taste

* Freshly ground black pepper

* 1 tbsp chopped spring onions

* 50 gm mozzarella and 25 gm cheddar cheese – sliced or grated

Method

* Slice the bread 1 inch thick.

* Grill one side only.

* Beat butter, garlic, herbs, seasoning and spring onion together.

* Spread over the un-toasted side of the bread.

* Cover with slice of cheese.

* Place under a preheated grill.

* Allow cheese to melt.

* Serve hot immediately.

Aromatic hot chocolate

Cheese toast

Ingredients

* 500ml whole milk

* 2 cinnamon sticks

* Large strip each of orange and lemon peel

* ½ tsp vanilla extract

* 4 tbsp cocoa powder (or use 175g chocolate chunks for extra richness)

* 1 tsp cornmeal

* 2 tbsp brown sugar

* Whipped cream, to serve

METHOD

* Pour the milk into a saucepan with the cinnamon sticks, citrus peels and vanilla. Bring to the boil over a medium heat and boil for 8-10 minutes to infuse the milk.

* Strain the milk through a sieve into a jug. Discard the aromatics and leave the infused milk to cool, then pour into a clean pan with the cocoa and cornmeal. Bring to a simmer over a low heat, whisking now and then until thick and smooth. Divide between mugs and top with whipped cream

Crispy herb chicken

Ingredients

* 2 cups fresh breadcrumbs

* 1 tbsp lemon rind, grated

* 2 tbsp fresh parsley leaves, finely chopped

* 1 tsp garlic powder

* 1/2 cup plain flour

* 1 egg

* 1 tbsp milk

* 550 gram chicken breast

Vegetable oil for frying

FOR DRESSING

* 1 cup mayonnaise

* 1/2 cup sour cream

* 1/2 tsp chives or spring onions

* 1/2 tsp dried parsley

* 4-6 cloves Garlic

* 1/2 medium red onion (optional)

* 1/4 tsp ground black pepper

* Salt to taste

Method

1. Combine breadcrumbs, lemon rind, parsley and garlic powder in a dish.

2. Season with salt and pepper. Place flour on a plate. Whisk egg and milk together in a shallow bowl.

3. Coat pieces of chicken in flour, shaking off excess. Dip in egg mixture. Coat in breadcrumb mixture. Place on a plate.

4. Heat oil in a frying pan over medium-high heat.

5. Cook chicken, in batches, for 4 to 5 minutes each side or until golden and cooked through. Transfer to a plate lined with paper towel to remove excess oil.

6. Serve with a dip.

Prepare dip

1. Finely chop garlic, onions, chives and parsley.

2. Mix it well to the mayonnaise.

3. Add the sour cream

4. Add salt and pepper.

5. Check for salt and refrigerate.

6. Remove at the time of serving your chicken.

Hot chocolate with orange

Cheese toast

Ingredients

* 150ml milk

* 50ml double cream

* Zest of 0.5 orange

* 50 gm dark chocolate, chopped

* 25ml orange juice

Method

* Heat the milk, cream and orange zest together in a saucepan until simmering then remove from the heat and pour through a sieve into a jug to remove the orange zest. Pour the infused milk mixture back into the pan and add the chocolate, stirring until the chocolate has melted and is really smooth.

* Put the pan back on the heat to warm through then add the orange juice. Pour into a mug and serve.
